Mozzarella and Tomato Toast

Stringy mozzarella cheese and soft, sweet cherry tomatoes flavoured with sage make this a really easy, tasty lunchtime snack that tastes just like mozzarella and tomato pizza!

I posted a picture of this on Instagram a couple of weeks ago and didn’t really think anything of it. But now I cannot. stop. making. it. I must have made it for lunch at least three times a week. It’s so easy and so delicious. It tastes just like pizza!

Since I’ve left uni, I’ve found myself hanging around the kitchen at lunchtime wondering what I could make that’s more exciting than a sandwich. Before now, the toaster maker had been a godsend. We’ve tried EVERYTHING on it- paninis, bagels, wraps. I’ve also been a bit of a fan of buying cheap ready meals then adding my own extras, and pasta has been high on the list too. But they were all getting a bit boring…

This mozzarella and tomato recipe had originally been a recreation of something I had in a restaurant. It had been mushrooms and cheese on toast, but since I didn’t have mushrooms in the fridge I opted for tomatoes instead, and the result was amazing!

I also added some herbs since I’ve recently discovered our herb garden and so I’ve been busy experimenting with the herbs. Since sage was our newest addition, this was the one that went on this. I’m keen to try oregano in this instead, because I think that would work so nicely with the tomatoes, but I just love the sage flavour of this so much. It gives such a rich, yet not overpowering, taste.

I used mozzarella in this, and that super-stringy, creamy cheese is essential in creating that pizza flavour, but you could use any cheese you have in the fridge. Add a drizzle of olive oil or balsamic vinaigrette to really bring out the Italian flavours!

This is so easy to make and really quick, so it’s ideal for lunchtime. Serve with leafy salad and coleslaw for something more filling. It also requires minimal preparation time in the kitchen, which is perfect in this hot weather!

Mozzarella and Tomato Toast

Stringy mozzarella cheese and soft, sweet cherry tomatoes flavoured with sage make this a really easy, tasty lunchtime snack that tastes just like mozzarella and tomato pizza!

Ingredients

  • 3 cherry tomatoes
  • 3 medium sized sage leaves
  • 2tsp oil
  • 2 slices of tiger bread
  • Handful of grated mozzarella
  • Cracked black pepper, to season
  • Balsamic vinaigrette, optional

Instructions

  1. Cut the tomatoes in half and rip the sage leaves into small pieces. Heat the oil in a small frying pan over a medium heat then add the tomatoes, cut side down, and sprinkle over the sage. Cover with a lid and allow to soften for about two minutes, then turn the tomatoes over to cook the other side. Cover again and cook for a further 2-3 minutes or until soft and squidgy.
  2. Whilst the tomatoes soften, toast the bread on both sides. Sprinkle over a thin layer of mozzarella, then add the tomatoes. Add a little more mozzarella over the tomatoes.
  3. Place under the grill for a minute or so, or until the cheese melts (keep an eye on it as it won’t take long). Add cracked black pepper to season and drizzle with balsamic vinaigrette. ▪
