200g plain flour

10g semolina

40g caster sugar

125g butter

1tsp vanilla essence

1 Preheat the oven to 160°c/320°f/Gas Mark 3. Line two baking tray with greaseproof paper.

2 Sieve the flour into a large bowl and add stir in the semolina and caster sugar. Rub in the butter until it resembles fine breadcrumbs.

3 Add the vanilla essence and work the mix into a dough. When it starts to come together, tip onto a floured surface and knead until smooth and soft. Form into a ball and wrap in clingfilm, then chill for 20 minutes in the fridge.

4 Roll the dough out on the lightly floured surface to a thickness of about a £1 coin. Cut out into shapes using cutters.

5 Place the biscuits onto the lined baking trays and cook in the oven for about 15 minutes, or until the dough is no longer soft and is a pale straw colour. Leave on the tray to cool for about 5 minutes then transfer to a wire rack.

6 Once fully cooled, you can decorate the biscuits.
